Chicken Potato Cazula
This recipe is cooked on your stove top
Ingredients
- 4 – 6 chicken thighs depending on size of the Cazula
- 1 large red or yellow union
- 8 garlic cloves
- 3 or more Yukon or red potatoes
- 2 or more tablespoons rosemary & or thyme
- Salt to taste
Instructions
- Put just enough water in the Cazula to cover the bottom
- Place the chicken thighs in the center so they are closely packed
- Layer the onion slices over the chicken
- Mince and mix the garlic cloves into the chicken thighs
- Slice the potatoes into bite size cubes and layer over the mix
- Sprinkle the rosemary & or thyme over the mix
- Lightly sprinkle salt over everything. Braggs aminos is another choice.
- Set the terracotta cooker on the heat diffuser over the stove burner, gas or electric and set to low. Monitor in 30 minutes to see how its heating. It can take 45min to get hot enough to smell the food cooking, be patient. Some burners are hotter than others. Slightly increase the heat if necessary but not by much. The clay keeps heat.
- Total cooking time will take 3 to 4 or more hours depending on how much food and burner heat. I use my noise and check to see if the bones lift from the meat.

This recipe is prepared on your cook top. Amounts proportional to size of the terracotta cooker.
Ingredients
- Chuck or other cuts
- Potatoes…Yukon, Red, Purple or other firm potato
- Onions…preferable red. Yellow is great too
- Garlic… I like garlic so as much as you want
- Carrots…2 Large carrots
- Celery…2 large stocks
- Peppers…Jalapeño to taste
Instructions
- Cut the stew meat into bite size cubes
- Cube the potatoes to bites size
- Cut union in half then skin and slice and dice
- Diced garlic gloves, as many as you want
- Slice the carrots into bite size
- Thin slice the celery
- Mince the Jalapeño
- A small amount of water to increase heat transfer from burner to clay, it’ll get juicy later in the cooking cycle of approximately 4 hours
